Seitan and Broccolini with Clementine Teriyaki


My daughter inspired me to make this dish because she LOVES Clementines!! David and I ended up loving the dish. The sauce has a great flavor to it and paired with the noodles it helps to not overwhelm the dish. While it might sound complicated to make it was not. Trust me, with 2 kids running around while I'm making dinner complicated is not an option.

This serves 2, if you want to serve 4 just double Seitan and Broccolini, there is more than enough sauce.

8 Ounces Sliced Seitan
6-8 Stalks of Broccolini
Lo Mein Noodles

Clementine Teriyaki Sauce

1/2 Cup Low Sodium Tamari
1/3 Cup Light Brown Sugar
1/3 Cup Fresh Clementine Juice
1/4 Cup + 1 Tbs Rice Vinegar
1/4 Cup Water
Zest from 1 Clementine

Mix all the sauce ingredients together in a small pan let it go at a lively simmer for 20 minutes, until reduced and slightly thick. The sauce will NOT be super thick when it is hot. It will very slightly cover the back of a spoon and look syrupy, but it’s not going to be thick until it cools, so don’t worry if it seems runny. At the end of the cooking you should see large, excited bubbles (this is the sugar caramelizing), so if you don’t see those, keep cooking. Set aside.

Cook Lo Mein Noodles according to package directions. Set aside.

Heat a large non-stick or cast-iron skillet over medium high heat. Add the seitan and let brown on all sides, about 5-10 minutes. Remove to a bowl, turn up the heat to high, and add broccolini in one layer. Once you get color on one side, flip, reduce heat to low, and cover the pan to finish the cooking, another 2-3 minutes. The broccolini should be bright green and cooked to a tender-crisp.

Once you are ready to serve, add the seitan to the pan with the broccolini. Drizze enough teriyaki sauce in to coat everything. Beware, if the pan is too hot you risk burning your sauce. Once everything is heated and covered in a nice glaze, serve immediately with the Lo Mein Noodles.

This sauce is strong so you just need enough to coat.

This side dish was emailed to me by a friend, so I thought I would try it tonight with dinner. It's Quinoa with Garlic, Pine Nuts, and Raisins and it was quite good. Had a mild but very addictive flavor!

1 c Quinoa, rinsed well (I might only do 3/4 c next time I make it)
1/4 c pine nuts
2 TBSP olive oil
2 cloves of garlic, sliced or diced
1/3 c parsley, chopped
1/4 c raisins
1 TBSP fresh lemon juice
Salt and pepper

Toast quinoa in saucepan over medium heat (about 2 mins). Add 1 3/4 c water and boil. Reduce to med-low and simmer, covered, until liquid absorbed (about 10-15 mins). Remove and let sit covered for 2 mins.

Toast pine nuts in skillet on high heat until turning brown, toss while toasting to prevent burning on one side, transfer to plate. In pan, add olive oil and garlic and cook until golden (about 2 mins). Transfer garlic to plate, leaving oil in pan.

Fluff quinoa with fork and add all ingredients.

Brrrrrr...time for something warm!


With the cold weather here I decided it was time for some yummy Chili with Sweet Cornbread. Now I'm not going to give you a chili recipe because everyone thinks their mom's chili is the best. But I am going to suggest you try my Sweet Cornbread, it was fantastic.

2/3 c maple syrup
1/3 c canola oil
1 c plain soymilk
1 c whole wheat flour
1 c fine organic cornmeal
1 TBSP baking powder
1 tsp salt

Preheat oven 350 degrees and spray 9x9 baking pan with nonstick spray.

Mix all wet ingredients. Mix all dry ingredients. Mix together and pour batter into pan. Bake 35 mins or until toothpick comes out clean.

Real Garlic Bread

I decided to go gourmet and make real garlic bread with dinner tonight. It was amazing!! I love garlic and used 2 heads for 1 loaf of french bread. If you have the time give it a try!

Cut off the top of a garlic head, coat with olive oil, and season with salt and pepper.

Wrap it in foil, and roast it at 350 degrees for 30-50 mins or until golden and tender. Turn it over halfway through cooking.

Broil french bread cut in half and buttered, soy butter of course :)

Squeeze out the garlic from the skin and smear it onto toasted bread.

Enjoy!!

Who doesn't love appetizers?


I found a recipe for Artichoke Dip (from The Kind Diet) so I decided to try it tonight before dinner. It turned out pretty good. Served with some whole wheat crackers, it was a great addition to a good meal!

2 (8.5 oz) cans quartered artichoke hearts in water, drained
1 c Vegenaise
1 c grated soy Parmesan
1 garlic clove, finely chopped
Paprika
Crackers for dipping

Mash up the artichokes in a bowl. Add Vegenaise, cheese, and garlic and combine well. Place in baking dish, and bake 350 degrees for 30 mins or until browned on top. Sprinkle with paprika and serve.

Mashed Potatoes, made with Soy Milk and Soy Butter
Tofurkey Gravy
Roasted Vegetables (which I made and everyone RAVED about)
Dinner Roll

And for dessert, I made Pumpkin Muffins!!!

I was a wonderful meal, so good I might have to make it again soon!!

Panera VS Bread Co


If you are looking for a great vegetarian sandwich, I have found one! It's at Bread Co (or for you non-STL's, Panera) and it's called the Mediterranean Veggie and it's delish!! To be vegan just ask for no feta. It has a great spread and a nice crunch to it. It's also only 560 calories for a whole sandwich, which is one of the lowest on their menu!

Amazing Side Dish!


Maple-Mustard-Glazed Potatoes and String Beans!!! It sounds scrumptious, doesn't it?? The smell was mouth-watering and it did not disappoint! Best side dish I have made, would be great to impress a non-Vegan friend!

2 pounds small Yukon gold potatoes, halved
1/2 pound string beans, halved, ends cut off (I would add a bit more)
1 yellow onion, thickly sliced
2 cloves garlic, minced
3 TBSP tamari or soy sauce
1/4 c pure maple syrup
3 TBSP Dijon mustard
2 TBSP olive oil

Preheat oven to 400, grease 9x13 dish. Put potatoes, string beans, and onion is a 9x13 dish. In a bowl mix together remaining ingredients until the mustard is dissolved. Pour over the vegetables and mix until coated. Cover with foil and put in oven. Bake 25 mins. Remove and toss, spooning sauce over mixture. Turn oven down to 350 and cook for 25 mins uncovered. Remove and toss, spooning sauce over mixture again, cook 25 more mins.

Salads and Shopping


I spent quite a bit of time shopping yesterday at Nordstroms Half-Yearly Sale. After all my conquests, ie. purchases, I decided it was time for a quick bite. Since I was right next to Nordstroms Cafe I thought I should give it a try. After looking over the menu I decided on their Nicoise Salad. I was delicious!! The dressing was amazing and the potatoes were hot which added an interesting touch to the salad. I ordered it without the egg and salmon.

Mexican Casserole



Tonight for dinner I made a new recipe, a Mexican Casserole. While everything in it I love, (tortilla chips, "ground beef", refried beans, cheese) together it did not turn out great. Oh well, you have to keep trying to find ones you like!

So Simple Pasta


I love this recipe. Literally all you have to cook is the pasta and it taste great. Not a strong flavor but still delicious. Easy to make if you are somewhere with limited supplies, oh say.....a dorm room? (wink, wink)

Linguini with Pesto, Pine Nuts, and Sun-Dried Tomatoes

8 oz whole wheat linguini
1/2 c basil pesto (see below for recipe or you can buy from a store)
1/2 c sun-dried tomatoes, diced
1/2 c pine nuts

Cook pasta, drain keeping some of the water. Return pasta to pot and stir in the pesto, sun-dried tomatoes, and pine nuts. If pasta seems too dry add some of the pasta water.

Basil Pesto Makes 1 1/3 cup
1/4 c pine nuts
4 cloves garlic
3 c fresh basil
1/4 c vegan Parmesan Cheese
1/2 tsp salt
1/8 tsp pepper
3/4 c EVOO

In food processor, or blender, combine the pine nuts and garlic and pulse. Add the basil and pulse. Add the cheese, salt, and pepper and pulse. Slowly add the EVOO, processing until the oil if fully combined.

I HAVE FOUND A CHEESE!!!


This is a breakthrough in my cooking options!! Since going vegan my husband and I have been unhappy with all the cheese options that are out there. With a recommendation from a cooking class I decided to give a new one a try. Daiya, and I love it!! Now I have only tried the shredded cheddar, but it does not disappoint. Tonight we made cheese and bean quesadillas and they turned out fantastic. So simple and easy, but soooo delicious! To help them brown spray tortilla with oil before placing in pan.

Great Eats in KC


While visiting Kansas City recently someone recommend a new restaurant. Eden's Alley, www.edenalley.com, has something for everyone. They offer many different options from vegan, vegetarian, gluten free, even raw. They start your meal with Agave butter, which is like honey butter, and bread-yum yum! My father ordered the waffles with maple syrup and walnuts. They were so sweet it was like dessert for breakfast. While I ordered the Vegan Breakfast, which consisted of tofu over breakfast potatoes. It was great and you know I couldn't pass up an opportunity to have breakfast!! I will definitely be going back next time I visit KC!

What a better way to start back than with a wonderful appetizer.

I love Bruchetta, but you already know that. Here is a great recipe that I found. Easy to make but takes some time chopping.

Double Tomato Burchetta Servings 12

6 roma (plum) tomatoes, seeded and chopped
1/2 c sun-dried tomatoes, packed in oil, chopped
3 cloves of garlic, minced
1/4 c olive oil
2 TBSP Balsamic Vinegar
1/4 c fresh basil, chopped
1/4 tsp salt
1/4 tsp pepper
1 French Baguette, sliced

Mix everything in a large ziploc and let marinate.

Preheat oven Broiler, low. Broil baguette, until slightly brown, 5-6 mins. Top with tomato mixture. Viola!!

Date Night Dinner



Last night we tried a new restaurant, Sub-Zero Vodka Bar (http://subzerovodkabar.com/). It was fantastic! They have a lot of options for Vegans, including a build your own burger. We started with deep fried green beans and a veggie sushi roll, which was amazing!! Then for dinner we both built a veggie burger.

By the way, try the Sweet Carolina Peach Sweet Tea Vodka, taste like Peach Ice Tea!!!! That could get you into trouble, haha!!

Best Recipe Ever!

I made the BEST dish I have made since going Vegan!! Yes, that is a bold statement but I have found a recipe that I LOVE!! What else can I say about this, try it and let me know what you think.

Pasta Bake

8 oz Rotini (or Penne, Rigatoni)
1 28 oz can crushed tomatoes (with basil if possible)
1 TBSP Olive Oil
3 cloves garlic, minced
1 cup sliced black olives
3 Italian-style soy sausages, cut into 1/4" slices
2 TBSP tomato paste
1 tsp dried basil
1 tsp dried oregano
1 tsp dried parsley
1/2 tsp black pepper
1/4 tsp hot pepper flakes
1 1/2 c shredded vegan Cheddar Cheese (I like Daiya)

Cook pasta, set aside. Preheat oven to 350.
In a large skillet, heat oil over med heat. Add garlic and cook for 2 min. Stir in tomatoes, olives, soy sausages, tomato paste, basil, oregano, parsley, black pepper and hot pepper flakes. Reduce heat to med-low, cover, and cook for 10 mins.
Add pasta to sauce and half of cheese, stir until coated. Pour into a 9x13 greased casserole dish, sprinkle remaining cheese over top. Cover with foil and bake for 15 mins. Remove foil and bake for 10 mins.

Another great plus, it reheats great!

Back with a BANG!

Yes!! I am still here and still Vegan! August was a crazy month and we spent a lot of time eating out, traveling, and making old recipes. My goal this week was to eat at home every night and make 2 new recipes, goal accomplished. My first recipe was not blog worthy, but tonight's was delicious!!!


I made BBQ Tofu Nuggets with Garlic Lemon Broccoli and Cauliflower. The nuggets were fantastic and everyone was a fan! So simple and easy, but a bit of time involved. These would also make a great appetizer.

Smoked Tofu, cubed
BBQ Sauce
Plain or BBQ Potato Chips, crushed

Brush each piece of tofu with BBQ sauce and roll in crushed chips. Place on greased cookie sheet and bake at 375 degrees for 12 minutes.

So simple, so delicious!

Tonight we ordered out Pei Wei, my daughter loves Chinese! As I was deciding what to order I realized I didn't not want to order my "usual", Pad Thai-no egg. As I looked over the menu I remembered that I used to LOVE the Dan Dan Noodles dish Pre-Vegan, but could not order it because they use egg noodles. Then I had a thought, why not just ask them to use rice noodles instead? I am in LOVE!!!! It was delicious and a much needed change. I always tell everyone you can find something vegan to eat just about anywhere. I forget that just because they have some options if something else sounds good see if you can tweak it. Don't just look at what is offered, but what sounds good. Most places are more than happy to change a few ingredients so you can enjoy the meal you want.

Almond Milk vs Regular Milk

As I was sitting at my kitchen table this morning, ready to eat my breakfast, I looked down at my bowl of cereal and thought how pretty the fresh fruit had made it look. How often do you take the time to "dress up" your food so that it looks more appealing and taste more delicious? My plain bowl of cereal with just a little bit of fruit added made me stop and think about what I was eating, and stop to enjoy it.

Interesting comparison between Almond Milk(Vegan) vs 2% Milk. Almond Milk has 60 calories, milk has 100. Almond milk has 2.5 g of fat and so does milk, but Almond Milk has 0 Trans Fat whereas milk has 1.5 g. Almond Milk has 0 cholesterol, milk has 10 mg. Almond milk has less carbs and sugars. This is what is probably most surprising to any non-Vegans, Almond milk and milk have the same amount of Calcium and Vitamins A & D. You should try it some time and see what you think, we like Almond Breeze unsweetened.

Sometime we get so caught up on how difficult something is suppose to be that we make it harder than it is. I think a lot of people have this attitude with eating vegan. It should be so difficult to find things to eat, when in reality it is so simple. My husband is out of town so dinner tonight had to be quick, easy, and no prep time. I decide to make pasta marinara with garlic bread and a big side salad. I often forget to not worry about finding a recipe and just make something I love.

Easy and Delicious

Tonight's dinner was so easy to make that I recommend if you have been wanting to try something, make this. It was easy to put together and took no cooking skills, only down side is you have to give yourself enough time. We had Roasted Sausage, Peppers, Onions, and Garlic over Brown Rice, delicious! So simple, here you go:

12 cloves of garlic (you don't even have to mince these, just peeled!!!)
3-4 red, yellow, or green bell peppers (any combo will do) cut into 3/4" strips
2 onions, quartered and cut into 3/4" strips
2 TBSP Olive Oil
Salt and Pepper to taste
4 vegan Italian Sausages (I used Smart Sausages by LightLife)

Preheat oven to 425 degrees. Combine garlic, bell peppers, onions, oil, salt, and pepper, tossing to coat. Place on baking sheet and cook for 20 mins. Stir in the sausages and cook 15-20 mins, until sausages start to brown.

I served this over brown rice made with vegetable broth instead of water, it was great!

I had some of the best Bruschetta I have ever eaten at Brio (http://www.brioitalian.com/index.html)!! It is their seasonal Bruschetta so you have to go soon if you want to try it. It has a basil pesto sauce spread on the bread, with heirloom tomatoes and yellow peppers drizzles in olive oil, topped with fresh basil. YUM YUM!!

Big Ass Crunchy Peanut Butter Oatmeal Cookies

My daughter insisted on making a special treat for her grandpa who came to visit today. I found this recipe and believe me, the picture does not do it justice! They were wonderful!! Give them a try.

2 c whole wheat flour
2 c rolled oats
2 tsp baking powder
1 tsp salt
3/4 c canola oil
3/4 c peanut butter
1 c granulated sugar
1 c brown sugar
1/2 c vanilla soy milk
2 tsp vanilla extract

Preheat oven to 350 degrees, lightly grease two cookie sheets.
Mix flour, oats, baking powder, and salt. In a separate bowl mix together the oil, peanut butter, sugars, soy milk, and vanilla.
Add dry ingredients to the wet, and mix. For perfectly round, large cookies: pack a 1/3 c measuring cup with dough, pop out and roll the dough into a firm ball. Lightly grease the bottom of a pie plate; press the top of the cookies with the bottom of the pie plate to flatten to a 1/2-inch thickness. Bake 12-15 min till cookies have puffed a bit and are lightly browned. Allow to cool at least 10 mins to firm up before moving off the cookie sheet.
Makes 12 cookies.

Breakfast for Dinner

In case you haven't been following my blog, or don't know me, I am a huge lover of breakfast!! Finding Vegan breakfast can be difficult but I have found a new cookbook with lots of recipes and ideas. Tonight for dinner we had pancakes and they were scrumptious!! They were very filling and had a sweet touch to them. I dressed them up with powdered sugar and fresh strawberries. I served it with vegan sausage, what a great meal!!

1 1/4 cup all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
2 TBSP canola oil
1/3 c water
1 to 1 1/4 c soy milk
1 tsp vanilla extract
2 TBSP pure maple syrup

Sift together the flour, baking powder, salt, and cinnamon. In separate bowl, combine all the other ingredients. Add wet ingredients to dry, mix until just combined-do not overmix.

Dinner Party

Tonight we had a few friends over for a dinner party. It was great company, great food, and fun times!
For our appetizer we had an Insalata Caprese Salad-Vegan Style: Tomato, Cucumber, and Basil with Balsamic Vinegar and fresh pepper.







For dinner we had Pasta Puttanesca with home made garlic bread.






And for dessert we had peanut butter cookies with chocolate drizzled on top and fresh strawberries dipped in chocolate.

Vegan Breakfast, Yay!!


I was told about a place here in St. Louis that does a great vegan breakfast so this morning me and the family loaded up and went. I am a huge fan of the first meal of the day so I was rather excited to give it a try. It's called SweetArt (http://www.sweetartstl.com/) and it was heavenly!!! We ordered a VEGAN CINNAMON ROLL!! Wonderful, but unfortunately no pic-it was just a bit too good to stop!! Then we got french toast, which was divine and scrambled tofu with tomato, avocado, and facon (fake bacon) all on a english muffin. They also have a bakery that offers many vegan options. Guess we will have to go back to give some other things a try.

Pigs in a Blanket

















I love when you find a recipe that you once loved and it's been Vegan-ized. I found Vegan Pigs in a Blanket, so I gave it a try. This takes some time, but is a great classic dinner. To balance the time spent making the Pigs in a Blanket I made the side salad last night and let it marinate over night. It was so easy, just chop up some veggies you love (cucumber, yellow pepper, cherry tomatoes, and onion) and toss them in balsamic vinegar.

Pigs in a Blanket

2 c whole wheat flour
3 tsp baking powder
1 tsp salt
1/3 c vegetable shortening
1 c water
1/2 TBSP applesauce
1 package vegan hot dogs (cut each one into 3 pieces)

Mix flour, baking powder, and salt. Add in shortening and mix with blender. Make a well in the center and pour water and applesauce in, stir until well blended.

Knead dough on a lightly floured surface. Tear off a small ball of dough, flatten it out, and roll around a hot dog piece.

Place onto ungreased cookie sheet. Bake 12-15 mins at 450 degrees.

Taking the Time

Tonight I had a wonderful experience. I went to a mindful eating cooking class and it opened my eyes to so many things.

How often do you eat and not even bother to stop and really look at the food, or take the time to truly taste what you are eating? We order something we "love" and then eat it so quickly we can not even enjoy it. Take time to slow down, smell it, look at it, enjoy all the flavors as you taste it.

We have lost sight of the purpose of food. It is to nourish our bodies and minds. Think about what you are putting into your body. Think of all the things that your body does for you without you even asking it to. Do you ever thank it for all it does? We do not treat our bodies kindly. When thinking of food we have become obsessed with calories, carbs, good for you, bad for you. Think about what is the energy of the food you are eating? Are you giving your body what it need to do it's job or are you trying to be healthy by giving it the lowest calories possible, empty calories with no nutritional value.

Love your body, thank your body. Fuel it with all the wonderful things that it wants.

It's nice to be back

After a week long hiatus from cooking we have finally gotten back on track. I decided to make our first meal an easy one to prepare, a "meatloaf" with garlic broccoli and sweet potatoes. It was a delicious way to start the week!!

David is not a fan of broccoli and he loved it tonight, ate 3 servings!!! Give it a try!

Garlic Broccoli

1 TBSP Olive Oil
6 cloves garlic, minced
5 c broccoli florets
1/2 tsp salt
1/4 c water

Place oil and garlic in skillet on med heat and cook for 2 mins. Stir in broccoli, salt, and water. Cover and increase heat to high, when you hear a strong sizzle, reduce heat to low and cook 2-3 mins, stirring frequently.

I was recommended a new place to try, Foundation Grounds, and it did not disappoint. It is an adorable coffee house/cafe/bakery and they have a vegan friendly menu. I got the Tempeh Salad Sandwich with a side salad. It is like a chicken salad sandwich with cranberries and raisins in it, yummm!! The Balsamic Dressing on the salad is the best I have ever tasted, you have to try it if you go.

They had a selection of vegan desserts, so of course I had to get some!! I got a cookies n cream cupcake and a pumpkin muffin, the muffin was outstanding-you wouldn't even be able to tell it's vegan. I also heard they have the BEST vegan chocolate chip cookies.

On a side note

Side dishes can make or brake a meal and finding easy quick ones can be difficult. Tonight for dinner we had Sesame Roasted Asparagus and it was wonderful!! Give it a try:

1 lb fresh asparagus, ends removed
2 tsp dark sesame oil
1/2 tsp salt
1 TBSP sesame seeds, toasted

Toss asparagus, oil, salt, and sesame seeds until coated. Bake for 10-12 mins at 475 degrees.

Interesting tip I read: to determine where you should cut the ends off asparagus hold both ends and bend, it will snap where it should be cut.

Newton's Law


Making dinner tonight was so frustrating. Everything that could go wrong, did! I was making a new stir-fry recipe that I had found. Simple enough, right?? Not so much, I had Tamari instead of Tahini, when I grated my ginger I used the wrong side and it didn't grate, I forgot to use the sesame oil, and so on. But guess what, I just kept going and it actually turned out pretty good. David even said it's a keeper!! I will definitely try to make the recipe again, but I will also keep tonight's version. If you want to give my version a try it was super easy (without all the mistakes, haha)!

1 small onion, chopped
1/2 block firm tofu, cubed
4 large button mushrooms, chopped
2 cloves garlic, minced
1/2 small red bell pepper, chopped
1/2 cup bean sprouts
Tamari (quantity depends on how much you like)
1/4 tsp salt
1/4 tsp pepper

Saute onions, tofu, and mushrooms in oil until the onions are translucent. Add the garlic and red peppers and saute for 2-3 mins. Add the tamari, bean sprouts, salt, and pepper, saute for 1-2 mins. Serve over brown rice.

This doesn't make a huge quantity, enough for maybe 2 people.

Dollars and Sense

One of David's biggest concerns with going Vegan was not what are we going to eat, but how much is this new lifestyle going to cost us? This was a valid question to which I did not have the answer, nor could I simply look it up. Now that we have been Vegan for 3 months (yay!!) I am able to answer this question.

I have compared our eating out and grocery bills pre-vegan and post-vegan. Surprising to the both of us we have saved money with our new lifestyle. Not only are we now filling our bodies with wonderful, and usually organic, foods but we are saving money doing it! When I shop at the grocery store I mostly shop in the produce section, with a few exceptions. But I no longer shop in the meat, dairy, or processed foods section.

You are probably thinking, "Of course they are saving money, they don't eat out any more." Not true! We are eating at home more than before because the whole point is to try and be more healthy, but we still eat out often.

Here is a perfect example: This is the sandwich I had at Einstein's today for lunch. It was super yummy and my whole meal only cost $3.20!!!!

Philly, You were so good to us!

This morning was our last day in Philly and we decided to grab brunch at Mi Lah Vegetarian. They have a completely Vegan Brunch on Sat and Sun, I was in heaven!! Breakfast is probably what I have missed the most from going vegan and they had it all! I got Belgian Waffles and David got French Toast. It was perfect and amazing.

I am very shocked at how vegan friendly Philly has been. We have eaten somewhere different each day with many options to choose from (4 places are within 2 blocks of our hotel). I look forward to visiting again some day and will spread the word of what a fun and exciting city this is to visit!!

Philly Fun-Day 2



Today for lunch I got to try something I have been wanting for a while, Vegan Sushi. It was delicious! We got a fried sweet potato roll and an avocado and squash roll. We also had an order of Mushroom and Asparagus in Teriyaki Sauce, AMAZING!!

Someone suggested that we try Horizons (http://www.horizonsphiladelphia.com/) for dinner and I am so glad they did! We started our meal with an order of their Vietnamese Tacos, so good, so spicy! For dinner I ordered the Grilled Seitan. It is Seitan served over a bed of mashed potatoes with spinach and a special sauce. It was superb! It was one of those meals that makes you realize that you don't miss meat or dairy at all!

Oh yeah, I also got a piece of Vegan Cheesecake, but no pictures of that. It looked so good that I forgot to take a picture!

Philly Fun!

Today was so much fun!! We headed out the door of the hotel and decided to just walk and see where it took us. About 5 blocks south of our hotel we ran into a Vegan Bakery, Sweet Freedom (http://sweetfreedombakery.com/index.html) and it was divine!! I got a chocolate chip cookie sandwich and it was so good I was licking my fingers to finished it.

Later we grabbed a cab over to Sabrina's Cafe (http://www.sabrinascafe.com/) where David and I ordered the same thing because it sounded so good. We got the Tofu Scramble, which is like scrambles eggs, with toast and home fries. Yummy!!!

After lunch we went on a Segway Tour. It was such a phenomenal experience, I would recommend it to anyone. I had to include a picture because David and I enjoyed ourselves so much!





And lastly for dinner we found an all Vegan Chinese restaurant, "Chicken" Sweet & Sour, "Shrimp" Fried Rice, and Moo Shu "Pork". Today has been such a great day with good eats!
